Has anyone seen a list of what we can't take into Canada this year on fishing trips. Eggs? Potatoes? Etc

Wini, All you can do is check a couple days before you leave. It is what it is, the only thing we know for sure is things will change.. Right now your fine and likely will be.
Honestly I would be more concerned if there will be enough water to float your boat. Anyone who is used to using a small channel, river or shallow area to access other areas of a lake will likely be in for a surprise unless they get significant rain.
Good luck

Nothing has really changed from last year, As long as your Eggs, Potato's, Chicken is commercially packaged and list the country of origin as the U.S. then your are fine as long as you don't exceed the limits specified.
